Lunches:
This week will be a combination of leftovers from the freezer, leftovers from the dinners during the week, & our standard variety of supplements: carrots with hummus, fruit, nuts, granola bars.
Dinner:
- Monday: Meatloaf muffins & tomato paella (freezer)
- Tuesday: Pasta with bolognese sauce - I'm going to try a modified version of this recipe.
- Wednesday: Greek style shrimp scampi.
- Thursday: Spinach & feta pasta
- Friday: Fresh tomato paella with balsamic chicken cutlets.
- Saturday: Quick summer tomato soup with goat cheese crostini .
- Sunday: Butternut squash soup with Broiled tomatoes with feta. I'll post the butternut squash soup recipe after I make it- I can't find it online at the moment.
